Instructions

  1. Preheat your oven to 325°F (165°C) and adjust the rack to the lower middle position.
  2. In a mixing bowl, beat the egg whites until foamy. Add cream of tartar, vanilla extract, and almond extract; continue beating on high speed until soft peaks form (about 5–6 minutes).
  3. In another bowl, sift together flour, sugar, and salt five times to aerate.
  4. Gently fold one-third of the flour mixture into the beaten egg whites at a time until fully incorporated.
  5. Pour batter into an ungreased tube pan and bake for 40–45 minutes until golden brown.
  6. Cool upside down on a wire rack for at least 2 hours before removing from pan.
  7. Slice the cooled cake horizontally in half, layer with whipped cream and sliced strawberries, then top with more whipped cream and strawberries.
