Ingredients

  • 1 pound asparagus
  • 2 ½ cups uncooked penne or rotini pasta
  • 2/3 cup sliced red onions
  • 1 ½ cups diced tomatoes
  • 1/3 cup red apple vinegar
  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup extra-virgin olive oil

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. While the pasta cooks, trim asparagus and blanch in boiling water for 3 minutes. Transfer to ice water.
  3. Whisk together dressing ingredients in a bowl until well combined.
  4. In a large bowl, mix cooked pasta, blanched asparagus, red onions, tomatoes, and half of the dressing. Toss gently.
  5. Serve chilled or at room temperature, topped with Parmesan cheese if desired.
