- 1 pound asparagus
- 2 ½ cups uncooked penne or rotini pasta
- 2/3 cup sliced red onions
- 1 ½ cups diced tomatoes
- 1/3 cup red apple vinegar
- 2 teaspoons freshly squeezed lemon juice
- 1 1/2 teaspoons minced garlic
- 1 teaspoon sugar
- 2 teaspoons dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 cup extra-virgin olive oil
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and set aside.
- While the pasta cooks, trim asparagus and blanch in boiling water for 3 minutes. Transfer to ice water.
- Whisk together dressing ingredients in a bowl until well combined.
- In a large bowl, mix cooked pasta, blanched asparagus, red onions, tomatoes, and half of the dressing. Toss gently.
- Serve chilled or at room temperature, topped with Parmesan cheese if desired.
