  • 10.5 oz grape tomatoes
  • 4 oz feta cheese
  • 2/3 cup walnuts
  • 6 Tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Prepare the vinaigrette by reducing balsamic vinegar in a saucepan and whisking with olive oil, Dijon mustard, honey, garlic, salt, and pepper.
  2. Boil trimmed asparagus in water until tender-crisp (4–5 minutes), then transfer to an ice bath.
  3. In a serving bowl, combine cooled asparagus with halved tomatoes and toasted walnuts.
  4. Drizzle the vinaigrette over the mixture; toss lightly.
  5. Add crumbled feta cheese on top before serving.
