  • 8 ounces sliced mushrooms
  • 5 ounces baby spinach
  • 4 tortillas (8 inch)
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Place sliced mushrooms in a microwave-safe bowl and microwave for about 2 minutes until softened; drain excess moisture.
  3. On a baking sheet, lay out the tortillas so half hang over the edge.
  4. Evenly distribute half of each cheese type on the exposed side of each tortilla, followed by baby spinach and softened mushrooms. Top with remaining cheese.
  5. Fold the other half of each tortilla over the filling and gently press down.
  6. Bake in the preheated oven for about 6 minutes, flip carefully, and bake for another 6-7 minutes until golden brown and crispy.
