  • 1 cup shredded carrots
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup crushed pecans
  • 1/4 cup shredded carrots

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased loaf pans.
  2. In a mixing bowl, beat together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs, mashed bananas, and vanilla extract; mix well.
  3. In another bowl, whisk together flour, baking soda, salt, and spices. Gradually add dry ingredients to the wet mixture until just combined.
