  • 8 bone-in, skin-on chicken thighs
  • Water (enough to cover chicken)
  • 1 small bunch of fresh parsley
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4 celery stalks, diced
  • Seasoning salt (to taste)
  • 1 cup pearl couscous
  • ⅓ cup fresh dill, chopped
  • Juice of 1 lemon
  • Salt and pepper (to taste)

Instructions

  1. Place chicken thighs in a large pot; cover with water. Bring to boil over medium-high heat, then reduce to low.
  2. Add diced onion, celery, and parsley; season with salt. Simmer for about an hour until chicken is tender.
  3. Remove chicken; stir in pearl couscous into the broth. Cook according to package instructions (approx. 10 minutes).
  4. Shred cooked chicken with forks; discard skin and bones.
  5. Return shredded chicken to the pot along with dill and lemon juice; stir well and season to taste.
  6. Serve hot, garnished with extra dill and accompanied by dukkah or crackers.
