Ingredients

  • 8 oz bow tie pasta
  • 1.5 cups corn kernels (fresh or frozen)
  • 1.5 cups cherry tomatoes (halved)
  • 0.5 small red onion (chopped)
  • 2 Tbsp fresh cilantro (finely chopped)
  • 12 ripe avocados (diced)
  • 0.5 cup plain Greek yogurt
  • 0.25 cup fresh lime juice
  • 2 cloves garlic (minced)

Instructions

  1. Cook the bow tie pasta in salted boiling water until al dente, according to package instructions. Drain and cool under cold water.
  2. While the pasta cools, chop the red onion, halve the cherry tomatoes, dice the avocados, and finely chop the cilantro.
  3. In a mixing bowl, whisk together Greek yogurt, lime juice, minced garlic, salt, cayenne pepper, and roughly chopped cilantro until smooth.
  4. In a large bowl, combine cooled pasta with corn kernels, cherry tomatoes, red onion, avocado, and cilantro.
  5. Pour dressing over the salad mixture and toss gently to combine before serving.
