  • For the streusel: 1/2 cup packed brown sugar
  • 2 teaspoons cinnamon
  • 3/4 cup all-purpose flour
  • 6 tablespoons cold butter, grated
  • For the cream cheese layer: 6 ounces cream cheese, at room temperature
  • 1 1/4 cups powdered sugar
  • 23 tablespoons whole milk
  • 1/2 teaspoon vanilla extract
  • 13 teaspoons instant coffee, to your taste

Instructions

  1. Preheat your oven to 350°F. Grease a 9-inch bundt pan thoroughly to prevent sticking.
  2. In a large mixing bowl: Beat together the salted butter and brown sugar until well combined. Add in Greek yogurt (or sour cream) and vanilla extract. Mix until smooth. Incorporate eggs one at a time, ensuring they’re fully combined after each addition. Gradually add flour, baking powder, baking soda, cinnamon, cardamom, and kosher salt. Slowly mix in brewed coffee until just combined; be careful not to overmix.
  3. In a small bowl: Combine 1/4 cup brown sugar with 1 teaspoon cinnamon. In another medium bowl: Mix remaining flour with the brown sugar-cinnamon mixture. Add grated cold butter using your fingers to create a crumbly texture.
  4. Spoon half of the batter into the prepared bundt pan. Sprinkle cinnamon sugar evenly over this layer. Dollop warmed cream cheese on top of the cinnamon sugar layer; spread it evenly. Carefully spoon remaining batter over cream cheese layer, smoothing it out gently. Top with streusel mixture evenly across the surface.
