  • 1 oz unsalted butter
  • 250 g granulated sugar
  • 90 g Dutch cocoa powder
  • 2 oz vegetable oil
  • 1 oz light corn syrup
  • 1 tbsp pure vanilla extract
  • 1 large egg yolk
  • 1 large egg (room temperature)
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp cornstarch
  • 60 g all-purpose flour
  • 2 oz chocolate chips or chunks
  • 12 oz good quality chocolate (for ganache)
  • 6 oz heavy whipping cream (for ganache)
  • 1 tbsp butter (for ganache)
  • Rainbow candy-coated chips (for decoration)

Instructions

  1. Preheat your oven to 350°F (180°C). Line a 9×13 inch baking pan with foil and grease it well.
  2. In a large saucepan over medium heat, combine the water, butter, sugar, corn syrup, and cocoa powder. Cook for about 2–3 minutes until smooth; remove from heat and cool slightly.
  3. Stir in vegetable oil, vanilla extract, one whole egg, and the egg yolk until fully combined.
  4. Mix in baking soda, salt, and cornstarch; then gently fold in flour and chocolate chips until just combined.
  5. Pour batter into the prepared pan and bake for approximately 14–18 minutes. A toothpick should come out with moist crumbs.
  6. Allow brownies to cool completely before topping with ganache made by heating cream and pouring it over chopped chocolate until melted; stir in butter until smooth. Drizzle over cooled brownies and top with rainbow chips.
