  • 1 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 1 tbsp olive oil
  • 1/2 tsp crushed red pepper
  • 1.5 cups medium shells (dried pasta)
  • 8 oz fresh chicken sausage
  • 4 cups fresh baby spinach
  • 1/2 cup half & half
  • 1/3 cup finely grated Parmesan cheese

Instructions

  1. Prepare vegetables by quartering cherry tomatoes and chopping bell pepper and onion.
  2. In a large skillet, heat olive oil over medium heat, then sauté the tomatoes, bell pepper, onion, salt, and crushed red pepper for about 7-8 minutes until softened.
  3. Cook the medium shells in boiling salted water until al dente.
  4. Add chicken sausage and minced garlic to the skillet; cook for 5-6 minutes while breaking up the sausage.
  5. Stir in granulated sugar and half & half until absorbed; add spinach until wilted.
  6. Combine cooked pasta with sauce using a slotted spoon, stirring to coat evenly.
  7. Mix in Parmesan cheese; use reserved pasta water for desired creaminess before serving with lemon juice.
