  • 2 cups diced yellow onions
  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour (gluten-free option available)
  • 4 teaspoons sweet mild paprika
  • 1 tablespoon chopped fresh dill
  • 3 cups low-sodium chicken broth or vegetable broth
  • 1 ½ cups whole milk
  • ¾ cup sour cream
  • 2 tablespoons white apple vinegar or apple juice vinegar
  • ½ cup chopped fresh parsley
  • Kosher salt and cracked black pepper

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced mushrooms and diced onions, cooking until onions are translucent and mushrooms reduce in size (about 15 minutes).
