  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh basil, julienned
  • 2 cups baby spinach
  • 5 sun-dried tomatoes, cut into julienne strips
  • 1 teaspoon arrowroot powder (optional)

Instructions

  1. Season chicken breasts with lemon-pepper seasoning and salt.
  2. Heat olive oil in a large skillet over medium heat. Cook seasoned chicken for about 10-12 minutes on each side until golden brown and cooked through (165°F internal temperature). Remove and set aside.
  3. In the same skillet, sauté diced onions until translucent; add minced garlic and cook until fragrant.
  4. Pour in chicken broth and heavy cream, then stir in parmesan cheese and fresh basil until the cheese melts. Add arrowroot powder if desired to thicken the sauce.
