  • 2 lbs boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1½ tbsp apple cider vinegar
  • 2 tsp sesame oil
  • ⅓ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • 2 tsp fresh ginger (grated)
  • 1½ tsp garlic (minced)
  • 2 tbsp cornstarch
  • ¼ cup water

Instructions

  1. Place chicken thighs in a 6-quart crock pot.
  2. In a small bowl, whisk together pineapple juice, apple cider vinegar, sesame oil, soy sauce, brown sugar, ketchup, ginger, and garlic. Pour over the chicken.
  3. Cover and cook on high for 3-4 hours or low for 6-7 hours until the chicken is tender.
  4. Remove chicken; mix cornstarch with water until smooth. Stir into the crock pot and cook on high for an additional 10-15 minutes until thickened.
  5. Return chicken to the pot whole or shredded before serving over rice or noodles.
