Ingredients
- 2 cups raw unsalted cashews (soaked)
- ¼ cup nutritional yeast
- 3 tbsp lemon juice
- 1 tsp salt
- ½ tsp paprika
- ½ tsp cumin
- ½ tsp turmeric (optional)
- 2 chipotle peppers in adobo sauce
- 1–3 tsp adobo liquid
- 1 tsp agave nectar
- ¾ cup water
- ¼ cup olive oil
Instructions
- Soak cashews in water for approximately 2 hours. Drain and rinse.
- In a high-speed blender, combine soaked cashews, nutritional yeast, lemon juice, salt, paprika, cumin, turmeric, chipotle peppers, adobo liquid, agave nectar, and water (omit olive oil).
- Blend until mostly smooth for about 30 seconds.
- While blending, gradually add olive oil until fully emulsified and creamy (1-2 minutes).
- Transfer the mixture to a crockpot set to 'warm' and garnish if desired.
