  • 900 g eggplants (sliced)
  • 400 g zucchinis (sliced)
  • Yellow bell pepper (sliced)
  • Red bell pepper (sliced)
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded parmesan
  • 1/2 cup ricotta cheese
  • 1 tsp minced garlic
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • Salt & pepper to taste
  • 9 sheets lasagna sheets (cooked)
  • Extra mozzarella for topping (optional)

Instructions

  1. Preheat the oven to 180°C (350°F). Slice the eggplants and zucchinis, tossing them in olive oil, salt, pepper, oregano, and garlic powder.
  2. Sauté the seasoned vegetables in a skillet over medium heat for about 5–7 minutes until slightly softened.
  3. Prepare the cheese sauce by melting butter in a saucepan, whisking in flour, then gradually adding milk and cream until thickened. Stir in the cheeses and seasonings.
  4. Assemble the lasagna by layering cheese sauce, cooked lasagna sheets, sautéed vegetables, and more sauce until all ingredients are used.
  5. Cover with foil and bake for 25 minutes; then remove foil and bake an additional 15 minutes until golden brown.
