- 900 g eggplants (sliced)
- 400 g zucchinis (sliced)
- Yellow bell pepper (sliced)
- Red bell pepper (sliced)
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp garlic powder
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1.5 cups milk
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella
- 1/2 cup shredded parmesan
- 1/2 cup ricotta cheese
- 1 tsp minced garlic
- 1 tsp dried basil
- 1 tsp dried parsley
- Salt & pepper to taste
- 9 sheets lasagna sheets (cooked)
- Extra mozzarella for topping (optional)
Instructions
- Preheat the oven to 180°C (350°F). Slice the eggplants and zucchinis, tossing them in olive oil, salt, pepper, oregano, and garlic powder.
- Sauté the seasoned vegetables in a skillet over medium heat for about 5–7 minutes until slightly softened.
- Prepare the cheese sauce by melting butter in a saucepan, whisking in flour, then gradually adding milk and cream until thickened. Stir in the cheeses and seasonings.
- Assemble the lasagna by layering cheese sauce, cooked lasagna sheets, sautéed vegetables, and more sauce until all ingredients are used.
- Cover with foil and bake for 25 minutes; then remove foil and bake an additional 15 minutes until golden brown.
