  • 1.25 sticks Unsalted Butter
  • 1.25 cups Cream Cheese

  • 0.67 cups Passion Fruit Puree or Pulp
  • 4 large Egg Yolks
  • 0.5 cups Unsalted Butter (for curd)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine vanilla cake mix, eggs, and milk; beat on medium speed until smooth.
  3. Divide the batter between the pans and bake for about 30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  4. For the frosting, beat together cream cheese, unsalted butter, powdered sugar, and vanilla extract until creamy.
  5. To prepare the passion fruit curd, whisk granulated sugar, egg yolks, whole egg, and passion fruit puree in a saucepan over medium heat until thickened; stir in unsalted butter until melted.
  6. Once cooled, assemble by layering cake with passion fruit curd and frosting on top.
