  • 3 cups freeze-dried strawberries
  • 1 cup melted coconut oil
  • 1/3 cup plain Greek yogurt or sour cream
  • 2 large eggs
  • 3/4 cup honey or granulated sugar
  • 1 cup high-quality strawberry jam
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/4 cup milk
  • 6 ounces cream cheese, at room temperature
  • 2 sticks salted butter, at room temperature
  • 2 1/23 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup warm milk

Instructions

  1. Process freeze-dried strawberries into a fine powder using a blender.
  2. Preheat the oven to 350°F (175°C) and line cupcake molds with paper liners.
  3. In a large bowl, mix melted coconut oil, Greek yogurt, eggs, honey, strawberry jam, and vanilla extract until well combined.
  4. Gently fold in flour, baking powder, baking soda, salt, and two-thirds of strawberry powder until just incorporated.
  5. Mix in milk until fully combined but do not over-mix.
  6. Divide batter into prepared molds and bake for 25–30 minutes until set.
  7. To make frosting, whip cream cheese until fluffy; add butter and beat until light. Gradually mix in powdered sugar and remaining strawberry powder; add warm milk to desired consistency.
  8. Frost cooled cupcakes and garnish with crushed freeze-dried strawberries.
