  • 2 teaspoons coconut extract
  • 1 (8 oz) can crushed pineapple (do not drain)
  • 1 1/2 cups sweetened shredded coconut (divided)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large bowl, beat together the butter, cream cheese, and sugar until light and fluffy.
  4. Add the eggs, vanilla extract, and coconut extract; mix until smooth.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the crushed pineapple and 1 cup of shredded coconut.
  6. Pour the batter into the prepared pan and sprinkle with remaining coconut. Tent loosely with foil.
