  • 1 cup Silk Unsweetened Vanilla Almond Milk
  • 1 large egg
  • 2 to 3 tablespoons liquid-state coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries
  • maple syrup for serving

Instructions

  1. In a large mixing bowl, whisk together flour, sugars, baking powder, baking soda, and optional salt.
  2. In a separate bowl, mix almond milk, egg, coconut oil, and vanilla extract until well combined.
  3. Pour the wet mixture into the dry ingredients; stir gently until just combined (avoid overmixing).
  4. Fold in blueberries carefully.
  5. Preheat a non-stick skillet over medium-high heat and lightly grease it.
  6. Pour about 1/4 cup of batter onto the skillet; cook until bubbles form on top (about 3 minutes), then flip and cook for another 2-3 minutes until golden brown.
