  • 1 cup diced red bell pepper
  • 3/4 cup diced celery
  • 1/3 cup diced red onion
  • 1 cup matchstick carrots
  • 1/2 cup mayonnaise (full fat or avocado oil mayo)
  • 1/2 cup fat free Greek yogurt
  • 1 Tablespoon red apple vinegar
  • 2 teaspoons spicy brown mustard
  • 3 teaspoons raw honey
  • 1 clove roasted garlic, smashed
  • 1 teaspoon fresh-cracked black pepper
  • 1 Tablespoon fresh parsley, minced

Instructions

  1. In a large bowl, mix mayonnaise, Greek yogurt, vinegar, mustard, honey, roasted garlic, and black pepper. Cover and refrigerate.
  2. Cook pasta according to package directions until al dente; drain and cool in a large bowl for about 5 minutes.
  3. Combine cooled pasta with diced vegetables and half of the parsley in the bowl.
  4. Add dressing gradually until desired consistency is reached; mix well and garnish with remaining parsley before serving.
