Instructions

  1. In a large mixing bowl, combine lemon zest and juice, olive oil, garlic, oregano, smoked paprika, black pepper, and salt. Reserve ¼ cup of this marinade.
  2. Add the chicken to the bowl and toss until well coated with the marinade. Cover and refrigerate for at least 30 minutes (up to 60 minutes for more flavor).
  3. Heat a nonstick skillet over medium-high heat with olive oil. Sear the marinated chicken until golden brown on one side (about 3–4 minutes), then flip and cook until fully cooked (internal temperature should reach 165°F).
  4. Serve on a plate drizzled with reserved marinade, topped with crumbled feta cheese and chopped parsley. Garnish with lemon wedges.
