  • 1 rack beef ribs (about 3 pounds)
  • 1 cup BBQ sauce (optional)
  • 2 teaspoons brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-low heat (250-300°F) for indirect grilling.
  2. Pat the ribs dry and remove any membrane from the back if desired.
  3. Generously coat both sides of the ribs with the spice mixture, pressing it onto the meat.
  4. Place the seasoned ribs bone-side down on the grill away from direct heat.
  5. Close the lid and cook for 1.5 to 2 hours, checking for tenderness.
  6. Use tongs to lift one end; if they bend easily, they’re ready. Aim for an internal temperature of 190-203°F.
  7. Optionally brush BBQ sauce on during the last 10-15 minutes of cooking.
  8. Allow the ribs to rest for at least 20 minutes before slicing.
