  • 4 boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 2 teaspoons minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • pinch cayenne pepper
  • 12 jalapeno peppers (minced)
  • 1 1/2 ripe mangoes (diced & divided)
  • 1/2 green pepper (diced)
  • 1/4 cup sweet onion (diced)
  • 1/4 cup red onion (diced)
  • 2 tomatoes (diced)
  • 1/4 cup chopped fresh cilantro (chopped fine)
  • 1/8 cup agave syrup

Instructions

  1. In a mixing bowl, combine lime juice, minced garlic, olive oil, salt, and cayenne pepper to create the marinade.
  2. Coat the chicken breasts with the marinade and let them sit for at least 15 minutes.
  3. In another bowl, mix diced mangoes (reserve half), jalapeno pepper, green pepper, sweet onion, red onion, tomatoes, cilantro, and agave syrup to prepare the salsa.
  4. Preheat your grill over medium-high heat.
  5. Grill chicken for about 7-10 minutes on each side until fully cooked through.
  6. Serve the grilled chicken topped with mango salsa.
