Description

Ready in just 20 minutes, this recipe is not only versatile but also allows you to customize it with your favorite veggies or proteins.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella or provolone cheese
  • ½ cup crumbled feta cheese
  • 1 small zucchini, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp sun-dried tomatoes, chopped
  • 2 tbsp Kalamata olives, sliced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat a large skillet or grill pan over medium heat.
  2. In a bowl, combine zucchini, bell pepper, onion, olive oil, salt, pepper, and oregano. Sauté for 3–4 minutes until slightly softened.
  3. Place one tortilla in the skillet and sprinkle half of the mozzarella over it.
  4. Add sautéed vegetables on top followed by sun-dried tomatoes, olives, and feta cheese.
  5. Top with the remaining mozzarella and place another tortilla on top.
  6. Cook for about 2–3 minutes per side until golden brown and cheese is melted.
  7. Remove from heat and slice into wedges before serving warm.
