  • 2 teaspoons taco seasoning (divided)

Instructions

  1. Prepare the dressing by whisking together mayonnaise, minced chipotle peppers, garlic, lemon juice, grated Parmesan cheese, milk or cream, salt, and pepper in a mixing bowl.
  2. Chop Romaine lettuce and halve cherry tomatoes. In another bowl, combine black beans, croutons, pepitas, and toss gently.
  3. Preheat the grill to medium heat. Brush salmon fillets with olive oil and season with taco seasoning. Grill for 5–7 minutes per side until cooked through.
  4. Grill corn on the cob until charred (approximately 10–15 minutes). Slice kernels off the cobs.
  5. Assemble the salad by layering Romaine lettuce on plates and topping with black beans, cherry tomatoes, croutons, pepitas, corn kernels, and grilled salmon. Drizzle with dressing before serving.
