- Fresh salmon fillets
- Romaine lettuce

- 1 tablespoon milk or cream

- 2 ears corn (husked)
- 2 teaspoons taco seasoning (divided)
Instructions
- Prepare the dressing by whisking together mayonnaise, minced chipotle peppers, garlic, lemon juice, grated Parmesan cheese, milk or cream, salt, and pepper in a mixing bowl.
- Chop Romaine lettuce and halve cherry tomatoes. In another bowl, combine black beans, croutons, pepitas, and toss gently.
- Preheat the grill to medium heat. Brush salmon fillets with olive oil and season with taco seasoning. Grill for 5–7 minutes per side until cooked through.
- Grill corn on the cob until charred (approximately 10–15 minutes). Slice kernels off the cobs.
- Assemble the salad by layering Romaine lettuce on plates and topping with black beans, cherry tomatoes, croutons, pepitas, corn kernels, and grilled salmon. Drizzle with dressing before serving.
