  • 1 low-fat mozzarella string cheese stick
  • Olive oil cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with a Silpat mat or spray lightly with olive oil.
  2. Place the mozzarella stick about one inch from the edge of the egg roll wrapper. Fold the sides over and tightly roll it up, ensuring the seam is on the bottom.
  3. Optionally, lightly spray or brush olive oil over each wrapped stick for even browning.
  4. Bake for 10-12 minutes until slightly golden.
  5. Flip each stick and optionally spray again before returning to the oven for another 5-8 minutes until golden brown.
