  • 2 tablespoons avocado oil
  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small head broccoli, cut into florets
  • 20 oz can pineapple chunks (reserve juice)
  • ¼ cup rice apple vinegar
  • ⅓ cup soy sauce or tamari
  • 1½ teaspoons sesame oil
  • 2 tablespoons arrowroot powder or cornstarch

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add the chicken and cook until browned and cooked through (about 10 minutes). Remove from the pan.
  2. In the same pan, add remaining avocado oil and stir-fry red onion, bell peppers, and broccoli until crisp-tender (5–7 minutes).
  3. In a bowl, whisk together reserved pineapple juice, rice apple vinegar, soy sauce or tamari, sesame oil, and arrowroot powder until smooth.
  4. Return the chicken and pineapple chunks to the pan. Pour the sauce over everything and stir well to combine. Cook until the sauce thickens (about 2–3 minutes).
  5. Serve hot over cooked rice, garnished with sesame seeds.
