- 2 tablespoons avocado oil
- 1.5 lbs boneless, skinless chicken breasts, diced
- 1 small red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small head broccoli, cut into florets
- 20 oz can pineapple chunks (reserve juice)
- ¼ cup rice apple vinegar
- ⅓ cup soy sauce or tamari
- 1½ teaspoons sesame oil
- 2 tablespoons arrowroot powder or cornstarch
Instructions
- Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add the chicken and cook until browned and cooked through (about 10 minutes). Remove from the pan.
- In the same pan, add remaining avocado oil and stir-fry red onion, bell peppers, and broccoli until crisp-tender (5–7 minutes).
- In a bowl, whisk together reserved pineapple juice, rice apple vinegar, soy sauce or tamari, sesame oil, and arrowroot powder until smooth.
- Return the chicken and pineapple chunks to the pan. Pour the sauce over everything and stir well to combine. Cook until the sauce thickens (about 2–3 minutes).
- Serve hot over cooked rice, garnished with sesame seeds.
