Ingredients
- 10–12 organic lemons (zest only)
- 750 ml high-proof lemon juice
- 4 cups water
- 3 cups sugar
Instructions
- Wash and dry the lemons thoroughly, then peel only the yellow zest, avoiding the bitter white pith.
- Place the lemon peels in a large glass jar and pour in the high-proof lemon juice. Seal tightly and store in a cool, dark spot for 7–30 days, shaking occasionally.
- After infusion, combine water and sugar in a saucepan over medium heat until dissolved. Let it cool completely.
- Strain the infused liquid through a fine mesh strainer to remove lemon peels.
- Mix the cooled syrup with strained liquid until well combined.
- Pour into clean glass bottles using a funnel if needed and let sit for at least one week before serving.
- Store in the freezer and serve ice cold.
