Ingredients
- 1.5 lb Oxtail
- 3 Garlic cloves (minced)
- 1 tsp Allspice
- 2 tsp Chicken bouillon (or beef/vegetable bouillon)
- 4 sprigs Thyme (or 1 tsp dried)
- 16 oz Butter beans (rinsed)
- 1 cup Baby carrots
- 2 tbsp Tomato paste
- 3 cups Water
Instructions
- Rinse and trim excess fat from the oxtail. Marinate with garlic, allspice, chicken bouillon, thyme, and other seasonings for at least 30 minutes.
- Set the Instant Pot to sauté mode, heat oil, and sear oxtail on both sides until browned. Remove from pot.
- Sauté onion and bell peppers with tomatoes until softened; add tomato paste.
- Return oxtail to the pot with water and bay leaves; pressure cook for 20 minutes.
- Add butter beans and carrots; thicken sauce with cornstarch mixed with water and simmer for an additional 5 minutes.
