Ingredients
- 1 pound ground beef
- 4 tablespoons butter
- ½ cup diced onion
- ¼ cup red bell pepper
- 3 stalks celery, chopped
- 1 cup diced Daikon radish
- 1 teaspoon arrowroot powder
- 3 cups chicken broth or beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- ½ teaspoon pepper
- 3 slices cooked crumbled turkey bacon
- 2 cups shredded lettuce
- 1 medium tomato, sliced
Instructions
- In a large stock pot, brown the ground beef over medium heat. Set aside.
- In the same pot, melt butter and sauté onion, red bell pepper, and celery until tender.
- Return the ground beef to the pot; add diced Daikon radish and arrowroot powder. Stir well.
- Pour in chicken broth; bring to a boil, then reduce to low-medium heat and simmer for 10-12 minutes.
- Remove from heat; stir in heavy cream, shredded cheddar cheese, salt, and pepper until smooth.
- Serve hot topped with shredded lettuce, tomato slices, and crumbled turkey bacon.
