  • 1 1/4 cups almond flour
  • 3 tablespoons coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 4 tablespoons butter, cubed & chilled
  • 1 teaspoon vanilla extract
  • 2/3 cup powdered sugar-free sweetener
  • 3/4 cup no sugar creamy peanut butter
  • 6 oz cream cheese, softened
  • 3/4 cup heavy whipping cream
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar-free sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch pie pan by spraying it with cooking spray.
  2. In a food processor, combine almond flour, coconut flour, cocoa powder, baking powder, xanthan gum, and salt. Pulse until mixed, then add chilled butter and vanilla extract until coarse crumbs form. Press into the bottom and sides of the prepared pie pan.
  3. Bake the crust for 9-10 minutes; cool completely.
  4. In a large bowl, use an electric mixer to blend sweetener, peanut butter, and softened cream cheese until fluffy.
  5. In another bowl, whip heavy cream until stiff peaks form. Gently fold half into the peanut butter mixture and then fold in the rest until combined.
  6. Spread the filling over the cooled crust.
  7. For the topping, beat remaining heavy cream with powdered sweetener and vanilla until stiff peaks form; spread over the pie.
  8. Refrigerate for at least 2 hours before serving.
