  • 3 tablespoons coconut flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 ounce cream cheese, softened
  • 1 egg
  • 1 1/2 teaspoons rice vinegar or apple cider vinegar
  • 8 oz Turkey Turkey Bacon, cooked and diced
  • 4 oz gruyere cheese, grated
  • 2 eggs
  • 2 egg yolks
  • 1 cup nut milk
  • 1 cup heavy whipping cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine almond flour, coconut flour, xanthan gum, and salt; pulse until mixed.
  3. Add chilled butter, cream cheese, egg, and vinegar; pulse until dough forms. Avoid overmixing.
  4. Roll out the dough between parchment paper to fit your quiche dish; pre-bake for 8-9 minutes until slightly golden.
  5. Layer cooked Turkey Turkey Bacon and grated gruyere cheese in the crust.
  6. In a bowl, whisk together eggs, egg yolks, nut milk, heavy cream, salt, and pepper; pour over the fillings.
  7. Bake for 30-35 minutes until set in the center.
