- 1 1/2 cups all-purpose flour

- 1 1/4 cups vanilla yogurt
- 1 cup sugar
- 3 large eggs
- 1/3 cup canola oil
- 2 teaspoons grated lemon zest
- 1 teaspoon pure vanilla extract
- 1 cup fresh blueberries + 2 tsp flour
- 1/3 cup freshly squeezed lemon juice
- 1/3 cup sugar for syrup
- 3/4 cup powdered sugar for glaze
- 1/2 teaspoon pure vanilla extract for glaze
- milk (as needed for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In one bowl, sift together flour, baking powder, and salt.
- In another bowl, whisk together yogurt, sugar, eggs, canola oil, lemon zest, and vanilla extract.
- Combine wet and dry ingredients until smooth.
- Toss blueberries in flour before gently folding them into the batter.
- Pour batter into the prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
