- 3 – 4 cups powdered sugar (for frosting)
- 1 tablespoon whipping cream (as needed for frosting)
Instructions
- Preheat your oven to 350°F (180°C) and prepare your cake pan by greasing it.
- In a bowl, whisk together the cake flour, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk and lemon juice.
- Cream together the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and lemon zest.
- Gradually add dry ingredients and wet ingredients alternately to the butter mixture without overmixing.
- Gently fold in the blueberries coated with flour.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before frosting with cream cheese frosting.
