  • 1 1/2 cups lemon juice (juice from about 8 lemons)
  • 2 cups white sugar
  • 4 eggs
  • 4 egg yolks
  • 1/8 teaspoon salt
  • 1 cup unsalted butter, cubed
  • 3 (8-ounce) containers mascarpone cheese
  • 10 ounces ladyfingers

Instructions

  1. Prepare the Lemon Curd: In a saucepan, combine lemon juice, sugar, eggs, yolks, and salt. Cook over medium heat while stirring until thickened. Strain through a sieve, stir in butter and vanilla, and refrigerate until chilled.
  2. Make the Lemon Syrup: Boil sugar, lemon peel strips, lemon juice, and non-alcoholic syrup together until dissolved. Remove peel and let cool.
  3. Prepare Mascarpone Layer: Beat heavy cream with powdered sugar until stiff peaks form; set aside. Mix mascarpone cheese with lemon zest until creamy, then fold in whipped cream and lemon curd.
  4. Assemble the Tiramisu: Layer half of the ladyfingers at the bottom of a baking dish. Brush with half of the syrup, spread with half of the lemon curd and mascarpone mixture. Repeat layers finishing with the remaining curd and mascarpone filling.
  5. Chill: Cover and refrigerate for at least 6 to 8 hours before serving.
