  • 1 cup unsalted butter (for frosting)
  • 4 cups powdered sugar
  • 3 tbsp heavy cream
  • 2 tbsp mango puree
  • 2 tbsp strawberry puree

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  4. Incorporate mango puree, Greek yogurt, and mango juice into the butter mixture.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Fill cupcake liners two-thirds full with batter and bake for about 18 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting with a mixture of butter, powdered sugar, heavy cream, mango puree, and strawberry puree.
