Description

Ingredients

  • 1 Tablespoon unsalted butter
  • 10 ounces Breakfast Sausage (Preferably Maple flavored.)
  • 1/4 Cup Sweet Onion (fine chopped)
  • 2 Cups All purpose flour
  • 2 1/2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1 1/2 Cups Milk
  • 1 large Egg (lightly beaten)
  • Butter and pure maple syrup for serving

Instructions

  1. Cook the sausage in a non-stick pan over medium heat until browned, then add finely chopped onion and sauté until tender.
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. In another bowl, lightly beat the egg and gradually mix in milk.
  4. Combine wet and dry ingredients, stirring gently to avoid overmixing. Fold in cooked sausage and onions.
  5. Heat the non-stick pan with avocado oil and pour 1/4 cup of batter for each pancake. Cook until bubbles form on top, then flip to brown the other side.
  6. Serve warm with butter and maple syrup.
