- 10 ounces Breakfast Sausage (Preferably Maple flavored.)
- 1/4 Cup Sweet Onion (fine chopped)
- 2 Cups All purpose flour
- 2 1/2 teaspoons Baking powder
- 1/2 teaspoon Salt
- 1 1/2 Cups Milk
- 1 large Egg (lightly beaten)
- Butter and pure maple syrup for serving
Instructions
- Cook the sausage in a non-stick pan over medium heat until browned, then add finely chopped onion and sauté until tender.
- In a mixing bowl, combine flour, baking powder, and salt.
- In another bowl, lightly beat the egg and gradually mix in milk.
- Combine wet and dry ingredients, stirring gently to avoid overmixing. Fold in cooked sausage and onions.
- Heat the non-stick pan with avocado oil and pour 1/4 cup of batter for each pancake. Cook until bubbles form on top, then flip to brown the other side.
- Serve warm with butter and maple syrup.
