Ingredients
- 2 chicken breasts
- 1/4 cup olive oil
- 2 lemons, juiced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1/4 cup olives, pitted and sliced
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
- Add chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
- Cook the quinoa according to package instructions; fluff with a fork and set aside.
- Heat a grill pan over medium heat. Remove chicken from marinade (discard leftovers) and grill for about 6–7 minutes on each side until cooked through (internal temperature should reach 165°F).
- Transfer chicken to a cutting board to rest before slicing into strips.
- To assemble bowls: layer quinoa first, followed by sliced chicken and top with cherry tomatoes, cucumber, red onion, olives.
