  • 2 chicken breasts
  • 1/4 cup olive oil
  • 2 lemons, juiced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1/4 cup olives, pitted and sliced

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
  3. Cook the quinoa according to package instructions; fluff with a fork and set aside.
  4. Heat a grill pan over medium heat. Remove chicken from marinade (discard leftovers) and grill for about 6–7 minutes on each side until cooked through (internal temperature should reach 165°F).
  5. Transfer chicken to a cutting board to rest before slicing into strips.
  6. To assemble bowls: layer quinoa first, followed by sliced chicken and top with cherry tomatoes, cucumber, red onion, olives.
