  • 1/2 cup ricotta cheese

  • 1/4 cup finely chopped green onions (scallions)
  • 1 large egg, lightly beaten
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1 (1 pound) package phyllo dough, thawed according to package directions
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 tablespoon fresh lemon juice (for serving dip)
  • 1/2 cup plain Greek yogurt (for serving dip)

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a bowl, combine thawed spinach, feta, ricotta, dill, green onions, beaten egg, nutmeg, and black pepper until mixed.
  3. Layer two sheets of phyllo dough brushed with melted butter; cut into strips.
  4. Place filling at one end of each strip; fold into triangles sealing the filling.
