  • 1 pound ground beef
  • 1 onion (chopped)
  • 1 stalk celery (chopped)
  • 1 tablespoon taco seasoning
  • 3 cups chicken broth
  • 1 cup salsa
  • 1 (12-oz) box small pasta shapes
  • 1 red pepper (chopped)
  • ½ cup sweetcorn
  • Salt & pepper (to taste)
  • ½ cup shredded Mexican blend cheese

Instructions

  1. Heat olive oil in a large deep skillet over medium heat. Sauté chopped onion and celery until softened, about 3-4 minutes.
  2. Increase heat to medium-high, add ground beef, and cook until browned, breaking it into crumbles. Stir in taco seasoning and pour in chicken broth.
  3. Add salsa, pasta shapes, chopped red pepper, sweet corn, salt, and pepper; stir to combine. Bring to a boil.
  4. Reduce heat to simmer; cover and cook until pasta is tender, about 10-15 minutes, stirring occasionally. Adjust with additional broth if needed.
  5. Remove from heat; stir in shredded cheese and let sit for 1-2 minutes until melted. Serve hot.
