  • ½ lb lean ground beef
  • 1 tsp olive oil
  • ½ cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 24 oz jar red pasta sauce or marinara
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken into pieces
  • 3 cups fresh baby spinach
  • ½ cup shredded parmesan
  • 1 cup fresh ricotta
  • 1 cup shredded mozzarella

Instructions

  1. In a large pot, brown the ground beef over medium-high heat for about 8–10 minutes. Drain excess grease and set aside.
  2. Sauté the chopped onion in the same pot for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Stir in tomato paste, red pasta sauce, broth, and seasonings, then return the meat to the pot. Bring to a low simmer.
  4. Add broken lasagna noodles and cover. Simmer for about 20 minutes until noodles are tender.
  5. Stir in spinach until wilted. Mix ricotta and mozzarella together in a bowl, then serve by dolloping on top of each bowl.
