  • 3 cups pineapple chunks
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 tbsp lime juice

Instructions

  1. In a mixing bowl, whisk together soy sauce, honey, olive oil, minced garlic, lime juice, salt, and pepper to create the marinade.
  2. Add cubed chicken to the marinade, ensuring each piece is well coated. Chill in the refrigerator for at least 30 minutes (up to 4 hours).

  4. Thread marinated chicken and pineapple alternately onto soaked skewers.
  5. Grill kabobs for about 10–12 minutes, turning every few minutes until the chicken reaches an internal temperature of 165°F (74°C) and has lovely grill marks.
