Ingredients
- 3/4 cup water
- 3 3/4 cups bread flour (divided)
- 1/3 cup granulated sugar
- 2 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1/3 cup heavy cream (room temperature)
- 1/3 cup whole milk (room temperature)
- 1 large egg (room temperature)
- 1 teaspoon vanilla bean paste
- 6 tablespoons unsalted butter (room temperature)
- 2/3 cup brown sugar (packed)
- 4 tablespoons unsalted butter (for topping)
- 12 pineapple rings (drained and patted dry)
- For icing: 1 cup powdered sugar, 2 tablespoons whole milk, 1/2 teaspoon vanilla
Instructions
- Make the tangzhong by whisking together water and bread flour in a saucepan over medium heat until it forms a paste. Set aside.
- In a stand mixer bowl, combine remaining flour, sugar, yeast, and salt. Add cream, milk, egg, vanilla, and tangzhong. Knead for about 2 minutes.
- Gradually add softened butter while mixing until incorporated; knead for another 8–10 minutes until smooth.
- Let the dough rest for about 30 minutes.
- Prepare filling by mixing brown sugar, butter, and cinnamon in a bowl until smooth.
- Melt together ingredients for caramel topping in a saucepan; set aside.
- Assemble in a lined baking pan with caramel topping at the bottom followed by pineapple rings and cherries.
- Roll out the dough, spread the filling evenly, cut into strips, roll them up tightly and place them on top of the fruit.
- Allow rolls to rise again until doubled in size before baking at 325°F for about 35–40 minutes.
