  • 3 3/4 cups bread flour (divided)
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup heavy cream (room temperature)
  • 1/3 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla bean paste
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 4 tablespoons unsalted butter (for topping)
  • 12 pineapple rings (drained and patted dry)
  • For icing: 1 cup powdered sugar, 2 tablespoons whole milk, 1/2 teaspoon vanilla

Instructions

  1. Make the tangzhong by whisking together water and bread flour in a saucepan over medium heat until it forms a paste. Set aside.
  2. In a stand mixer bowl, combine remaining flour, sugar, yeast, and salt. Add cream, milk, egg, vanilla, and tangzhong. Knead for about 2 minutes.
  3. Gradually add softened butter while mixing until incorporated; knead for another 8–10 minutes until smooth.
  4. Let the dough rest for about 30 minutes.
  5. Prepare filling by mixing brown sugar, butter, and cinnamon in a bowl until smooth.
  6. Melt together ingredients for caramel topping in a saucepan; set aside.
  7. Assemble in a lined baking pan with caramel topping at the bottom followed by pineapple rings and cherries.
  8. Roll out the dough, spread the filling evenly, cut into strips, roll them up tightly and place them on top of the fruit.
  9. Allow rolls to rise again until doubled in size before baking at 325°F for about 35–40 minutes.
