Ingredients
- 150g butter
- 100g powdered sugar
- 1 egg
- 50g finely ground pistachios
- 290g flour
- 300g white chocolate (for dipping)
- Edible rose petals (for decoration)
Instructions
- Preheat the oven to 190 °C (375 °F).
- In a mixing bowl, cream together softened butter and powdered sugar until smooth. Add the egg and ground pistachios; mix well.
- Gradually add flour and knead until the dough is smooth.
- Roll out the dough to a thickness of just under 1 cm on a floured surface. Cut out desired shapes using cookie cutters.
- Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes or until lightly golden brown. Allow to cool completely.
- Spread pistachio paste between two cookies to form sandwiches.
- Melt white chocolate using a double boiler and dip each sandwich cookie into the melted chocolate.
