Ingredients
- 3 – 3 1/2 pounds chicken thighs and drumettes
- 1 bunch cilantro
- 1 small onion
- 2 cloves garlic
- 1 – 2 medium jalapeno peppers
- 1/2 cup fresh orange juice
- 1/2 cup fresh lime juice
- 2 tablespoons + 1 1/2 teaspoons achiote paste
- Salt
Instructions
- In a food processor, combine cilantro, onion, garlic, jalapeno peppers, orange juice, lime juice, achiote paste, and salt. Blend until smooth.
- Place chicken in a resealable bag or bowl and pour marinade over it. Seal or cover and refrigerate for at least 4 hours or overnight.
- Preheat grill to indirect medium-high heat; oil grates with vegetable oil. Remove chicken from marinade.
- Grill chicken skin-side up for about 10 minutes without opening the lid. Then reduce temperature to about 350°F and continue cooking for another 30 minutes until an internal temperature of 170°F is reached.
- Let chicken rest for about 10 minutes before slicing and serve with lime wedges.
