  • 1/3 cup unsalted butter, cut into small pieces
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup plus 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8-inch baking pan with foil.
  2. In a heat-proof bowl over simmering water, melt the white chocolate and butter together until smooth.
  3. In a large bowl, combine the melted mixture with sugar; then mix in eggs one at a time and stir in vanilla.
  4. Sift flour and salt into the batter and fold gently until just combined; then add raspberries carefully.
  5. Pour the batter into the prepared pan and bake for 17-20 minutes until golden brown on top.
  6. Cool completely before lifting out of the pan using the foil edges; cut into squares.
