Ingredients
- 4 ears sweet corn
- 1/3 cup cream cheese
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1/2 tsp coarse salt
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 4 ounces canned fire-roasted chiles (mild)
- 1 jalapeño (finely diced)
- 2 cups shredded cheese (Mexican blend or cheddar with Monterey Jack)
- 4 green onions (finely sliced)
Instructions
- Preheat your oven's broiler to high. Husk the corn and place it on a baking sheet. Broil until lightly charred, turning occasionally. Once cooled, slice off the kernels.
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, sour cream, mayonnaise, salt, chili powder, and garlic powder until smooth.
