  • 1/3 cup cream cheese
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1/2 tsp coarse salt
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 4 ounces canned fire-roasted chiles (mild)
  • 1 jalapeño (finely diced)
  • 2 cups shredded cheese (Mexican blend or cheddar with Monterey Jack)
  • 4 green onions (finely sliced)

Instructions

  1. Preheat your oven's broiler to high. Husk the corn and place it on a baking sheet. Broil until lightly charred, turning occasionally. Once cooled, slice off the kernels.
  2. Preheat your oven to 375°F (190°C).
  3. In a mixing bowl, combine cream cheese, sour cream, mayonnaise, salt, chili powder, and garlic powder until smooth.
  4. Add roasted corn kernels, canned chiles (undrained), diced jalapeño, and shredded cheese to the mixture. Stir well.
  5. Transfer the mixture into a baking pan and spread evenly. Bake for 30–35 minutes or until hot and bubbly.
  6. Serve warm with tortilla chips.
