  • 2 small sweet potatoes, cut into 1/4 inch rounds
  • 1 yellow onion, sliced
  • 1 red or orange bell pepper, sliced
  • 6 tablespoons extra virgin olive oil
  • Kosher salt and black pepper, for seasoning
  • 4 salmon fillets (56 ounces)
  • 2 teaspoons chipotle chili powder
  • 2 teaspoons smoked paprika
  • 24 cloves garlic, minced or grated, to your taste
  • Zest + juice from 1 lime
  • 1 jalapeño, seeded if desired
  • 1/2 cup plain Greek yogurt or olive oil mayo
  • Juice of 12 limes, to your taste
  • 2 teaspoons honey
  • 1 cup cilantro, roughly chopped
  • 1 pinch kosher salt
  • 23 cups kale, spinach or arugula, roughly torn
  • 23 cups cooked quinoa or brown rice
  • Avocado, tortilla chips, for serving

Instructions

  1. Preheat oven to 425°F (220°C).
  2. On a rimmed baking sheet, toss sweet potatoes, onions, and bell peppers with olive oil, salt, and pepper; roast for 20 minutes.
  3. Season salmon fillets with chipotle chili powder, smoked paprika, minced garlic, olive oil, salt, and pepper; add to the sheet pan after veggies have roasted.
  4. Roast salmon for another 10-20 minutes until cooked through.
  5. Blend sauce ingredients until smooth; serve over salmon and veggies.
