  • 1 red bell pepper, thinly sliced
  • 2 stalks celery, thickly sliced
  • 1/3 cup tomato paste
  • 3/4 cup dry white apple vinegar
  • 1/2 cup water
  • Cooked white rice for serving

Instructions

  1. Marinate shrimp in lime juice, garlic, oregano, cumin, salt, and pepper for 30 minutes.
  2. In a large saucepan over medium-high heat, sauté onion, bell peppers, and celery in oil until softened (about 5 minutes). Add garlic and cook until fragrant.
  3. Stir in cilantro, spices, bay leaf, and tomato paste; cook for another minute.
  4. Pour in vinegar and water; let simmer for about 5 minutes.
  5. Cover and reduce heat to low; simmer gently for another 15 minutes.
  6. Add marinated shrimp; simmer until pink (about 5-6 minutes).
  7. Serve hot over cooked rice.
