Ingredients
- 1 1/2 lbs. chicken breasts
- 8.1 oz. jarred pesto
- 1 lb. dried rotini pasta
- 1/2 cup salted butter
- 2 cups shredded mozzarella
- Juice of 1/2 lemon
- 1/2 cup grated parmesan
Instructions
- Place chicken in the slow cooker and season with salt and pepper. Spread pesto on top and drizzle with lemon juice. Add sliced butter.
- Cover and cook on low for 5-6 hours without opening the lid.
- Near the end of cooking time, boil rotini according to package instructions, then drain.
- Shred cooked chicken in the slow cooker using two forks. Stir in pasta and parmesan until evenly coated.
